Farro & Bean Salad (Recipe)
Farro is a delighfully chewy grain, perfectly to eat for any salad

Farro & Bean Salad (Recipe)
Ingredients
- 500g of farro
- 1/2 red bell pepper chopped
- 1/2 orange bell pepper chopped
- 1 avocado, mashed
- 1/2 english cucumber, peeled, chopped
- 1 tbsp of capers
- 3 tbsp of hemp seeds
- 2 cans of beans, drained (I used white beans)
- 1 handful of flatleaf parsley, chopped finely
- 10 cherry tomato, cut in halves
- 1/2 red onion, finely chopped
- A couple of pickled jalapeños or fresh chili works too
- 3 tbsp of extra virgin olive oil (Kasadrinos **FREE Bottle**)
- juice of half a lemon
- 2 tbsp of aged aceto balsamico vinegar
- Sea salt, fresh ground pepper to taste
- Dash of smoked paprika powder
Instructions
- 1. Place the farro plus 2 cups of water in a small pot, and bring to a boil. Reduce heat to simmer, cover the pot, and cook for 15-20 minutes until the water is absorbed and the farro is fluffy but still chewy. Remove from the heat and transfer the farro to a large mixing bowl.
- Note: You can cool it overnight or for 3hrs in the fridge
- 2. Add all ingredients and mix thoroughly, let it rest for 30mins before serving
