Black eyed pea salad, is the perfect protein rich bean salad. It’s full of flavor and texture, nutritious, easy to make, and perfect for meal prep.

Black Eyed Pea Salad (Recipe)


Ingredients

  • 2 ½ cups cooked black eyed peas
  • ½ green bell pepper chopped
  • 1 English cucumber (medium-size ) cut into small pieces
  • 1 celery rib sliced thinly

Instructions

  • 1.  Add black eyed peas to large mixing bowl.
  • 2. Combine with red onion, bell peppers, grape tomatoes, garlic, and parsley.
  • 3. In separate mixing bowl whisk together olive oil, vinegar, garlic powder, and salt & pepper to taste.
  • 4. Pour over black eyed pea mixture and combine well.
  • 5. Better if allowed to chill at least 1 hour prior to serving.
