Farro & Bean Salad (Recipe)

Farro is a delighfully chewy grain, perfectly to eat for any salad

Farro & Bean Salad (Recipe)


Ingredients

  • 500g of farro
  • 1/2 red bell pepper chopped
  • 1/2 orange bell pepper chopped
  • 1 avocado, mashed
  • 1/2 english cucumber, peeled, chopped
  • 1 tbsp of capers
  • 3 tbsp of hemp seeds
  • 2 cans of beans, drained (I used white beans)
  • 1 handful of flatleaf parsley, chopped finely
  • 10 cherry tomato, cut in halves
  • 1/2 red onion, finely chopped
  • A couple of pickled jalapeños or fresh chili works too
  • 3 tbsp of extra virgin olive oil (Kasadrinos **FREE Bottle**)
  • juice of half a lemon
  • 2 tbsp of aged aceto balsamico vinegar
  • Sea salt, fresh ground pepper to taste
  • Dash of smoked paprika powder

Instructions

  • 1.  Place the farro plus 2 cups of water in a small pot, and bring to a boil. Reduce heat to simmer, cover the pot, and cook for 15-20 minutes until the water is absorbed and the farro is fluffy but still chewy. Remove from the heat and transfer the farro to a large mixing bowl.
  • Note: You can cool it overnight or for 3hrs in the fridge
  • 2. Add all ingredients and mix thoroughly, let it rest for 30mins before serving
