Greek Spinach Pasta Salad (Recipe)
Ingredients
- 8 ounces whole grain penne pasta (or pasta of your choice)
- 1 cup chickpeas
- 1 cup cherry tomatoes, sliced.
- 1/2 cup pitted Kalamata olives.
- 1 garlic clove minced
- freshly cracked black pepper to taste
- 4 cups fresh baby spinach
- ½ medium red onion thinly sliced
- ½ cup crumbled feta cheese
- Crushed red pepper for garnish (optional)
Lemon Dijon Dressing
- 1/4 cup fresh lemon juice.
- 2 tablespoons red wine vinegar.
- 1/2 cup extra virgin olive oil.
- 1 teaspoon dijon mustard.
- 1 teaspoon dried oregano.
- 1/2 teaspoon salt.
- 1/2 teaspoon ground black pepper.
Instructions
- 1. Bring a large pot of heavily salted water to a boil and cook pasta according to package instructions. Drain and rinse with cold water until no longer hot. Set aside.
- 2. Add all salad ingredients to a large bowl. Prepare vinaigrette in a small bowl or mason jar. Mix well to combine and pour over salad. Toss to combine.
